Mincemeat and Amaretto Ice Creams Combo

It’s that time of year again. The decs have come down, the house is ‘back to normal,’ and all that remains are a couple of sad spoonfuls of mincemeat in the bottom of the jar. I also had some mixed dried fruit which had been pre-soaked in brandy left and some cream at the back of the fridge and for another version of ice cream with a post Christmas feel I added Amaretto. The combo of mincemeat and amaretto ice cream is fantastic!

Don’t worry too much about use by 24th Dec dates on the cream.

My motto here is if it smells fine – it is fine

Plus here I added the last remains of a tub of clotted cream and half a tub of some fancy salted caramel cream which I bunged into the recipe just for luck.

These were added to my standard ice cream base:

Standard Ice Cream base Ingredients

2 large eggs
200g caster sugar
500 ml double cream
250 ml full milk or single cream

Whisk the eggs and sugar together until they turn a lighter colour. Using your food processor is just fine.

Add the milk and cream and whiz again

Add mincemeat and any pre-soaked dried fruit to the ice cream and place in the fridge to chill for 30 mins

If you have an ice cream maker put the mixture into it to churn following the manufacturer’s instructions. (If you haven’t got a ice cream maker then put in the freezer and go in every 15 mins to stir it round. Do this for 1 hour.

When thickened transfer to a freezer container, label and put immediately into the freezer.

As a variation I also made a batch of Amaretto Ice cream using a couple of tablespoons of the spirit and a couple of squirts of almond essence – A bowl of mincemeat and amaretto ice cream combo was a real hit. I’m not leaving it till AFTER the celebrations next time.
