How to Make Pimms Ice Lollies

Is it Pimm’s time yet? Contributor LizzieB’s Pimm’s ice lollies are a real treat for a summer party – not only do they taste great, they also look fabulous. These lollies are made with more traditional ingredients, including cucumber, strawberries and mint, but there is nothing to stop you adding whatever fruit you like. Simply slice the fruit finely and line your lolly moulds before adding the liquids. I have used sturdy paper cups to make these Pimm’s lollies, and included a stick for lifting them out of the cups. These are also great starter cocktail lollies, as you don’t need to create a sugar syrup to make them.



  • 60ml ready-made Pimm’s
  • 320ml lemonade
  • A selection of any of the following ingredients, finely sliced: cucumber, strawberries, mint, oranges, lemons
  1. Line your lolly moulds with a selection of the sliced fruit, then place in the freezer for 30 minutes to partly freeze.
  2. Mix together the Pimm’s and lemonade, then carefully fill the prepared lolly moulds.
  3. Freeze for 10 minutes, then add the sticks and return to the freezer for at least 4 hours, or ideally overnight, until set.
